Sundays Team Meeting

This Sunday the 22nd, we are having a team practise, meeting, gathering, get together, beer tasting contest, what ever you want to call it.

Here is a copy of the letter I sent to most of you: (if a couple of people could bring some ice, chips, maybe a potato sald or slaw or something, that would be cool)

We are planning a BBQ get together this Sunday at Todd’s house again.

We need a head count to plan on the food amount, etc. No need to bring anything except your wallets unless you want to make a dish and bring it. We will tally the cost of the food and divide by the amount of people that are eating to come up with a cost. We’re not looking to make money off of these, but we can’t afford the team to pay the full cost for all of them either. It won’t be expensive, but we will have some RIBS !

BYOB!!!!!! We will have very ample cold storage for beer and what not, but you will want to bring your own beverages.

I will be there in the morning getting ready some where around 10:00, if anyone is interested in coming by and helping out or just sit down and drink a cold one or to learn the smoker.

I am saying for the general members that 5:00 is a good time with around 7:00 as a target for dinner. Not sure exactly because we have not nailed down a specific time for cooking our RIBS as of yet. Bring the kids or interested friends in the team,
but please give me a head count so we can be prepared.

We will hand out a list of names for the team that have been suggested for everyone to pick their three or five most favorite. IF you have any suggestions, get them in now so we can add them to the list. This will narrow our choices down to a
manageable few, then we will go from there at a later time.

Upcoming Competitions

Here is a short list of up coming competitions that may suit our needs for a first affair.

09/14 - Oakland, TN
10/19 - Bolivar, TN
11/03 - Arlington, TN

If any of these are any better for you than another, feel free to let us know. Doing the Arlington one would give us more time to get are process & recipes together, but doing one earlier would get our feet wet sooner. We have requested information from these events and will post the costs and fees associated with each one. Basically, it takes around $500 to enter everything, get a port-a-John, electrical permit, etc, etc.

If you have a suggestion for coming up with additional funds so we could do maybe two before winter sets in, we're all ears.

Super Hero in our Midst!

Chris Davis; known as "Captain Awesome" in the super hero underworld, has chosen our BBQ Team to use as his secret hideout for squashing evil doers in the Midsouth area. Kryptonite will not harm him (however a shot of rumple will slow him down for .02 seconds while he downs it) and he can't see through lead, but he has been caught looking through a window or two. If you need legal advise, give Chris a call, as he has Frazier's phone number in his wallet.

(That's funny, I don't care who you are!!!!!!!!)

Supply List Updated!

We purchased a refrigerator that should work perfectly for now and fit on the rig with just an ever so slight modification. We also bought the ultimate ice bin for keeping the cold ones cold and a SYSCO Food Warmer. We have accumulated plenty of half pans, 1/8th pans, 1/4 pans and the like for now, but could use some pots, utensils and the like. For a more updated list click the link below. Johnny Werkhoven in the House!

Johnny Werkhoven is the newest member of our BBQ Team and is ready to start Q'ing. John is a CBO at a local financial institution (Chief BBQ Officer) and should bring a lot of insight to the team, especially in the Poultry category. John has been doing chickens with a lot of success for quite some time, and specializes in moist breasts with a little spice. We welcome John aboard!

Welcome Brian !

We welcome Brian McCoy to the team! Brian would have been a member sooner, but an old football injury was inflamed at the Tennessee Funfestival BBQ contest while Brian was bouncing Jim Drunkenmiller out of his tent. It was 50/50 on an amputation o f his leg, but fortunately all those jagermeister shots thinned out the blood to where the blood clots were never much of a factor. We're glad to see Brian back in shape and ready to BBQ.

July 15th The Membership prices will be going up to $300 a year and will be reflected in both the monthly payment plan and the one time payment plan. Register now to lock in the $250 a year membership.

Team Background

Our BBQ Team is currently spear headed by Todd Burriello, Ed Pierce & James Palmer. All three of us were members of our previous BBQ team for years. We have seen tough times with no wins and little funds and especially in recent years, much better times in regards to wins, placements and a stronger foundation with assets and funds.

Our former team, Knob Creek Smokers, has been very successful and consistent the last few years in the Rib category in Memphis In May and other competitions. Our desire is to take the knowledge and lessons learned from years of BBQ'ing to formulate our own identity, recipes, and processes.

Todd owns his own fire suppression design company named. Ed is a leading Realtor in the Memphis area for REMAX at Mallard Creek and Palmer is a General Manager at Huey's Restaurant here in Collierville.

All three of us have participated in various competitions and categories in sanctioned Memphis In May events. Including State Champion in the Hot Wing category, numerous top 20 placements in Memphis in May for Ribs including a 2nd and 6th.
